Apple of the Week—Lady Alice

Unlike most of the newer apples coming on the market, the Lady Alice was not the product of an apple breeding program. It was discovered as a chance seedling in an orchard in Washington . There is no way of knowing its’ heritage. The flesh is dense, crisp and does not brown easily. It has a flavor that reminds many people of an heirloom apple.

 The Lady Alice is good for eating and cooking. It is a good apple for storage. Many think that its flavor improves, becoming more complex as time passes.

Bonus Recipes

Mincemeat

Mincemeat was originally a way to preserve meat with alcohol and spices. Although it can still be made that way, hardly anyone does so now. I have made it, and it is quite a bit more complicated. I thought it was good, but not that much better.

I think that October 26 was chosen for mincemeat day because if a non-cooked recipe is chosen, it requires a long time of storage to develop its’ flavor to the fullest. To have it ready for the holidays, it must be made early.

A cooked recipe is given here. It is simpler, tastes good and has a good texture and is ready sooner. Although you can use it right away, the flavor will become more complex if it is stored for a few weeks.

I would use some chopped dried pears instead of candied cherries, which are usually either tasteless or taste like cardboard.

This is a really easy recipe, and can be used for either Halloween or Thanksgiving.
