The hot weather is here for sure. Do you hate to turn on your oven. Do you long for great tasting meals that can be produced with a minimum of cooking. Look no further than the humble salad. Expand your salad repertoire past the bowl of greens with tomatoes and cucumber. Make your own tasty salad dressings. Try some of our salad suggestions this week.

Recipe: To Grill Corn

Remove husks from corn cobs, break off stem if there is one. Brush each ear of corn with olive oil and set on grill. Cook a total of about 6-8 minutes, turning to toast all sides. Kernels should be lightly browned. Remove from grill—serve with lime quarters and salt or butter.

Recipes: Grilled Corn Salad

This is a really delicious salad that can be made ahead, transported etc.
Serves 4

Ingredients

2 ears sweet corn (or use Trader Joe’s frozen roasted corn, thawed)
Zest and juice of 1 lime
1/2 teaspoon chili powder or Penzey’s Arizona Dreaming spice mixture
2 Tablespoons teaspoons olive oil, divided
1 green onion, finely chopped
1 cup jicama, peeled and diced 1/4 inch
1 large tomato peeled, seeded and diced 1/3 inch
1 green chili finely diced
1 medium/large avocado, diced 1/3 inch
1/4 cup cilantro, chopped
1 small garlic clove, grated, or 1/4 teaspoon garlic powder
1/4 teaspoon salt (or to taste)

Directions

Heat grill to Medium/Hot.

In a small bowl, whisk together olive oil, lime zest and juice and chili powder.

Remove husks from corn cobs, break off stem if there is one. Brush each ear of corn with the olive oil mixture and set on grill. Reserve remaining olive oil mixture. Cook a total of 6-8 minutes, turning to toast all sides. Kernels should be lightly browned. Remove from grill and let cool.

Rest large end of ear in a wide bowl and use a sharp knife to remove kernels from cobs.

In a large bowl, mix corn kernels with reserved olive oil mixture and all the rest of the ingredients. Let sit at least 1/2 hour to let flavors mingle.

Recipes: Beet and Bean Salad

A good Hearty salad, to up the protein, add some cooked chicken.

16 oz jar sliced pickled beets
15 oz can canellini beans, drained and rinsed
1/4 cup chopped celery
1/4 cup chopped red onion, or green onion including tops, or chopped shallots
10 oz bag of lettuce or equivalent
1/2 cup basil pesto
1/2 cup crumbled bacon
1/4 t ground black pepper

Drain beets reserving 1/2 cup liquid. In large bowl combine beans, celery and onion. Add lettuce, toss. Add beets. 

In a small saucepan, cook and stir beet liquid, pesto, bacon and pepper until very warm. 

Add to salad, toss gently. Serve immediately

To Try:

Instead of lettuce,  use cooked potatoes and carrots. 

Add avocado chunks
Sprinkle with blue cheese
